Roasted Garlic + Infused Olive Oil

Olive oil is great. Roasted garlic is great. Roasted garlic olive oil is, you guessed it, great. There are so many opportunities for one, the other, or both in your everyday recipes. Roasted garlic can be mashed up and spread/mixed into anything. Toast? You betcha. Mashed potatoes? Absolutely. Don’t even get me started on what the olive oil can be used for…salad dressings, brushed on vegetables, bruschetta. The possibilities are endless.

Ingredients

  • 1 head of garlic, peeled

  • Olive oil

  • a few sprigs of thyme

  • a few peppercorns

Directions

  1. Preheat oven or toaster oven to 300 degrees F.

  2. Place garlic cloves in an oven proof bowl. Top with enough olive oil to cover (around 1 cup). Add thyme & peppercorns

  3. Cover tightly with foil. Bake for 30-40 minutes.

  4. Remove from oven, and place on a wire rack. Let cool completely.

  5. Remove thyme and peppercorns. Separate garlic from olive oil and store.
