Sweet Bacon Ragu
It was that kind of night when I discovered this amazing, delicious, pasta sauce. The kind of night where you open the fridge and say “I’ve only got [insert random ingredients here]…maybe I’ll just takeout”
The kind of night where I thought my dinner was headed in one direction, and it went in a completely different direction.
It was supposed to be some stir-fry. Then It was something with a bbq palate. And then it became italian — kind of.
But at the end of the day, it was 1000% delicious.
Ingredients:
1 carrot, minced
1 small onion, minced
2 celery sticks, minced
olive oil
salt & pepper to taste
1/2 lb. bacon, thinly sliced
1 Tbsp. tomato paste
2 tsp. brown sugar
1 14-oz can diced tomatoes
1 small can tomato sauce
1 bay leaf
1 tsp. smoked paprika
1/2 tsp. cinnamon
1 tsp. oregano
Directions:
On Medium heat, warm a heavy bottomed pot. Add olive oil, and allow a few seconds to get warm before adding the carrots, onion, celery, salt and pepper. Sauté until softened, about 3-4 minutes.
Reduce heat to low. Add in the bacon and cook, stirring occasionally until the fat renders out. Remove excess fat.
Stir in the tomato paste, brown sugar, diced tomatoes, tomato sauce, bay leaf, smoked paprika, cinnamon, and oregano.
Simmer for 30-45 minutes stirring occasionally. Serve over pasta.
